Cooking: Crepes

Hubby and I love crepes.  Our favorite crepe has nutella, strawberries and bananas.  One day, we decided that we should try to make it at home.  Yummy!

Ingredients:
     Crepe Batter
          2 large eggs, 3/4 cup milk, 1/2 cup water, 1 cup all purpose flour, 3 tablespoons melted butter,
          2 1/2 tablespoons sugar, a few drops of vanilla extract
     Sliced Strawberries
     Sliced Bananas
     Nutella

Steps:
     1. Pour about 1/2 cup of the batter into the pan
     2. Spread thinly around the pan, flip over when ready to cook other side
     3. Add nutella, sliced fruit or anything else you desire

     4. Fold in half, and then fold in half again.
     5. Leave plain or top with ice cream, whip cream, additional fruit, or an endless number of other options
     6. Eat, scarf down, devour…you get the idea

Cooking: Bowtie Pasta

My all time favorite pasta dish at The Cheesecake Factory is Farfalle with Chicken and Roasted Garlic.  I love it so much that I decided to make my own version at home.

Ingredients:  boneless/skinless chicken, jar of Alfredo sauce, box of pasta (usually I use Farfalle, but this time I only had Campanelle in the pantry), mushrooms, onion, and frozen peas (not pictured)

1.  Cook pasta according to directions on box.
2.  Cut chicken into small cubes.  Dice onion.  Slice mushrooms.  –> these can be done in any order you prefer
3.  Heat oil and cook mushrooms and onion for a couple of minutes first and then throw in the frozen peas.

4.  When soft, remove veggies from pan.
5.  Heat oil and cook chicken thoroughly.
6.  Add the veggies back to the chicken and then add the jar of Alfredo sauce.

7.  Mix everything together.
8.  Add the pasta and toss till all the pasta is covered in sauce.

9.  Serve with garlic bread, salad, etc.

Hopefully my homemade version is healthier than the restaurant one.  Especially after reading this article, which ranks my favorite dish as the “worst chicken entree in America”. In my defense, I never finish the dish in one sitting, so I really only eat about 1/2 the calories each time.

Cooking: Zucchini Cakes

For this recipe, you’ll need a grater of some sort.  I did not have one, so I shopped around and found this little ditty for $3 at Target.  Now, before you run out to get one, be advised that not all Targets carry it for so cheap.  I found mine at the Mountain View Target, but the same exact item was $10.00 more at the Sunnyvale Target (5 miles away).

OXO Good Grips Multi Grater

Ingredients: 


zucchini, bread crumbs, eggs, Italian blend cheese, garlic
(not pictured: salt, black pepper, and olive oil)

1.  Wash and cut both ends off the zucchini.  Grate zucchini.  Squeeze grated zucchini in a clean towel and remove as much liquid as possible.
2.  Place grated and squeezed zucchini in a medium sized bowl.  Add bread crumbs, eggs, shredded Italian blend cheese, and minced garlic.  Add salt and black pepper for taste.  Stir until well mixed.  (Scroll over the picture to see pre-mixed and mixed pictures.)

3.  Heat olive oil to medium heat.  Drop a heap of zucchini mix into the pan and flatten with a fork.  Cook for about 2-3 minutes on each side (until cooked through).

4.  Serve zucchini cakes with your favorite dipping sauce.
